• 8<\/span> chicken thighs<\/span> boneless and skinless<\/span><\/li>
• 2<\/span> red bell peppers<\/span><\/li>
• 2<\/span> green bell peppers<\/span><\/li>
• 12<\/span> oz<\/span> chopped tomatoes and green chilis<\/span><\/li>
• 4<\/span> oz<\/span> chipotle peppers in adobo sauce<\/span><\/li>
• 4<\/span> oz<\/span> cream cheese<\/span><\/li>
• \u00bd<\/span> cup<\/span> chicken broth<\/span><\/li>
• \u2153<\/span> cup<\/span> light brown sugar<\/span><\/li>
• 4<\/span> tbsp<\/span> fajita seasoning<\/span><\/li>
• \u00bc<\/span> cup<\/span> cilantro<\/span> fresh, divided<\/span><\/li>
• 2<\/span> tsp<\/span> lime juice<\/span> divided<\/span><\/li><\/ul><\/div><\/div>\n

  Instructions<\/h3>

  • Slice and rinse bell peppers. Set aside.<\/div><\/li>
  • Add chipotle peppers, adobo sauce, cream cheese, 1\/8 cup cilantro, and 1 tsp lime juice into a small food processor or blender. Pulse until a smooth puree has formed.<\/div><\/li>
  • Add chicken thighs, fajita seasoning, tomatoes and green chilis, chicken broth, brown sugar, and chipotle puree into your Instant Pot. Stir to ensure that chicken is completely coated.<\/div><\/li>
  • Seal Instant Pot and set to manual\/pressure cook for 10 minutes (if using thawed chicken) or 15 minutes (if using frozen chicken). Let naturally release for 5 minutes before flipping the switch to quick release the rest of the pressure.<\/div><\/li>
  • Remove chicken thighs to a bowl and shred.<\/div><\/li>
  • Add bell pepper slices to the remaining liquid left in the Instant Pot and set to manual\/pressure cook for 2 minutes. Quick release immediately.<\/div><\/li>
  • Return shredded chicken to the Instant Pot and stir in the remaining 1\/8 cup cilantro and 1 tsp lime juice.
