Taco-Bell Inspired Cheese Quesadilla

Ingredients

  • 2 tbsp jalapeno aioli*
  • ½ cup colby jack cheese shredded
  • ¼ cup bell pepper chopped
  • 1 flour tortilla 10-inch
  • 1 tsp light oil

Instructions

  • In a large skillet pan, heat light oil on medium-low.
  • Add tortilla to the pan, and top completely with quesadilla sauce, bell pepper, and cheese.
  • Lower heat to low.
  • Cover pan and let sit for 1-2 minutes, or until the cheese around the edges of the tortilla has begun to melt.
  • Fold tortilla in half with a spatula and press sides together gently.
  • Cook for 2-3 more minutes or until the tortilla is stiff to the touch, and then flip. Cook for an additional 1-2 minutes.
