To say I adore Taco Bell cheese quesadillas is a gross understatement. I’ve frequented locations in two cities were I’ve lived so often that regular employees know my order, I own Official Taco Bell™ Merchandise (flannel pajamas patterned with the iconic sauce packets), and there’s a constant supply of sauce in my cabinet (stored in a $5 Taco Bell container leftover from the triple cheesy gordita crunch box special promotion, of course). I can’t eat those delicious quesadillas every day, though–my bank account would kill me–so over the past year I’ve been attempting to perfect my own version that satisfies the craving.
This recipe makes a single quesadilla, which could be a 1 serving or 1/10 of a serving depending on how hungry you are.
Ingredients:
- 2 tbsp creamy jalapeno sauce (see my recipe here!)
- ½ cup shredded colby jack cheese
- ¼ cup chopped bell pepper
- 1 flour tortilla, 10-inch
- 1 tsp light oil
Directions:
- In a large skillet pan, heat light oil on medium-low.
- Add tortilla to the pan, and top completely with quesadilla sauce, bell pepper, and cheese.
- Lower heat to low.
- Cover pan and let sit for 1-2 minutes, or until the cheese around the edges of the tortilla has begun to melt.
- Fold tortilla in half with a spatula and press sides together gently.
- Cook for 2-3 more minutes or until the tortilla is stiff to the touch, and then flip. Cook for an additional 1-2 minutes.
Top with leftover bell peppers and serve with your favorite salsa or Taco Bell sauce. Yum!
