Oven-Baked Shredded Chicken Nachos

On nights when no one feels like cooking, our go-to household stables are either Chipotle or a microwaved quesadilla, but after spending a few days eating mostly whatever fast food we could find at truck stops along the New Jersey Turnpike we were both in desperate need of something at least mostly homemade… but still practically effortless. Sheet pan nachos were the only real solution.

This recipe makes four servings.

Ingredients:

  • 1 large bag tortilla chips
  • 1 rotisserie chicken, shredded
  • 3 tbsp fajita seasoning (see my recipe here!)
  • 3 cups shredded cheddar cheese
  • 3 cups shredded colby jack
  • 10 oz (about 1 can) diced tomatoes and green chilies
  • lime juice to garnish
  • hot sauce to garnish
  • creamy jalapeno sauce to garnish (see my recipe here!)

Directions:

  1. On a large baking sheet, lay out as many tortilla chips as you can.
  2. Top with shredded chicken, fajita seasoning, diced tomatoes and green chilis, and shredded cheese.
  3. Broil on low for 7-10 minutes, or until the cheese has completely melted.
  4. Serve hot and garnish with lime juice, hot sauce, and creamy jalapeno sauce. 

This recipe doesn’t keep in the fridge, but if it cools down while you’re eating and the cheese hardens just top with some additional shredded cheese and microwave it for a few seconds! Voila, beautiful fresh nachos.
